4 Healthy and Easy Recipes for 4th of July

It’s the Fourth of July Weekend, which means that there will be lots of grilling, parties, and delicious food. 

 

     1. Greek Kale Salad with Avocado

Greek Kale Salad with Avocado
For this recipe, you will need:
    • Kale, stems removed & roughly chopped
    • Avocado, cubed or sliced
    • Cucumber, diced
    • Cherry tomatoes, halved
    • Sweet bell pepper, diced 
    • Green pepper, diced 
    • Red onion, diced 
    • Artichoke hearts, quartered
    • Kalamata olive, sliced
    • Basil, chopped 
    • Feta cheese, crumbled (omit for vegan, dairy-free, and whole30-friendly)
    • Greek Vinaigrette Dressing 

    Directions:  In a large bowl, combine the salad ingredients. Add vinaigrette and gently toss salad. Serve as a side or add cooked chicken or salmon and enjoy as an entree salad.

    1. Sheet Pan Gnocchi

    Pan Sheet Gnocchi

    For this recipe, you will need:

    • Red onion, cut into ½"-thick wedges
    • Garlic cloves, unpeeled
    • Cherry tomatoes
    • Potato gnocchi
    • Extra-virgin olive oil, divided, plus more for drizzling
    • Kosher salt, divided, plus more
    • Freshly ground black pepper
    • Fresh lemon juice
    • Baby arugula
    • Basil leaves, large leaves torn
    • Parmesan shaved

    Directions: Place a rack in the middle of the oven; preheat to 425°. Toss onion, garlic, tomatoes, gnocchi, oil, kosher salt on a rimmed baking sheet to coat; season generously with pepper and toss again to combine.

    Roast, stirring once or twice until gnocchi is golden and starting to crisp, most of the tomatoes have burst, and onion is golden.

    Remove garlic from the baking sheet, peel, and place in a small bowl. Mash with salt (garlic should be pretty soft). Whisk in lemon juice and remaining oil; season dressing with pepper and more salt if needed.

    Add arugula, basil, and Parmesan to the baking sheet and drizzle dressing over; toss to combine. Divide among plates and drizzle with a little more oil.

    1. Turkey Strawberry Brie Sandwich

    Turkey Strawberry Brie Sandwich

    For this recipe, you will need:

    • Slider buns or rolls
    • Sliced turkey
    • Strawberries, sliced
    • Sliced brie cheese
    • Balsamic reduction

    Directions: Layer turkey slices, strawberries, and brie on buns. Top with a drizzle of balsamic reduction.

    1. Fourth of July Parfait

    4th of July Parfait
    For this recipe, you will need:

    • Greek yogurt
    • Blueberry puree
    • Strawberry puree
    • Granola
    • Chocolate 

    Directions: Divide all ingredients and layer half of each ingredient in two glasses.
