4 Recipes Inspired by Women in our Lives

There are so many important women in our lives that shape the way we live. In honor of International Women’s Day on March 8th and celebrating Women all month long, we have compiled some delicious recipes made by amazing women.

Slow Cooked Greek Chicken

Greek Chicken

For this recipe, you will need:

  • Yukon Gold potatoes
  • Chicken 
  • Onions
  • Garlic bulb
  • Oregano
  • Salt and pepper
  • Water
  • Olive oil
  • Cornstarch
  • Milk

Directions: Place potatoes in a slow cooker. Add chicken, onions, and garlic; sprinkle with seasonings. Pour water over the top. Drizzle with oil. Cook, covered, on low until chicken and vegetables are tender.

In a bowl, mix cornstarch and remaining water until smooth. Remove chicken and vegetables from the slow cooker; keep warm. Strain cooking juices into a small saucepan; skim fat. Bring liquids to a boil. Stir cornstarch mixture; stir into juices. Bring to a boil; cook and stir until thickened. Serve with chicken and vegetables.

Chilaquiles

Chilaquiles

For this recipe, you will need:

  • Lean ground beef (90% lean)
  • Fresh chorizo 
  • Onion
  • Garlic
  • Diced tomatoes with mild green chiles
  • Tortilla chips 
  • Monterey Jack cheese
  • Fresh cilantro
  • Optional toppings: Sour cream, diced avocado, and sliced red onion

Directions: Preheat oven to 350°. In a large skillet, cook and crumble beef and chorizo with onion and garlic over medium heat until meat is no longer pink; drain. Stir in both cans of tomatoes; bring to a boil. In a greased square baking dish, layer chips, half of the meat mixture, and cheese; repeat layers.

Bake, uncovered until cheese is melted. Sprinkle with cilantro. If desired, serve with toppings.

Old-fashioned Strawberry Shortcakes 

Strawberry Shortcake

For this recipe, you will need:

  • Fresh strawberries
  • Sugar
  • Vanilla extract

    SHORTCAKE:
  • All-purpose flour
  • Sugar,
  • Baking powder
  • Baking soda
  • Salt
  • Cold butter, cubed
  • Buttermilk
  • Heavy whipping cream

    TOPPING:
  • Heavy whipping cream
  • Sugar
  • Vanilla extract

Directions: Combine strawberries with sugar and vanilla; mash slightly. Let stand for at least 30 minutes, tossing occasionally.

Preheat oven to 400°. For shortcakes, whisk together flour, sugar, baking powder, baking soda, and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter onto a baking sheet. Brush with heavy cream; sprinkle with remaining sugar. Bake until golden. 

For the topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. To serve, cut shortcakes in half; top with strawberries and whipped cream.

Chicken Noodle Soup

Chicken Noodle Soup

For this recipe, you will need:

  •  Chicken
  • Water
  • Onion
  • Chicken bouillon granules
  • Celery ribs
  • Carrots
  • Potatoes
  • Cut green beans
  • Salt and pepper

    NOODLES:
  • All-purpose flour
  • Large egg
  • Salt
  • Butter
  • Baking powder
  • Milk


Directions: In a Dutch oven, cook chicken in water; cool slightly. Remove chicken from bones; discard bones—Skim fat from broth. Cut chicken into bite-sized pieces; add to broth with remaining ingredients except for noodles. Bring to a boil. Reduce heat and simmer, uncovered, for 50-60 minutes or until vegetables are tender.

Meanwhile, for noodles, place flour in a small bowl and make a well in the center. Stir together remaining ingredients; pour into well. Working the mixture with your hands, form a dough ball. Knead for 5-6 minutes.

Cover and let rest for 10 minutes. On a floured surface, roll the dough out to a square, and cut into strips. Cook noodles in boiling salted water for 2-3 minutes or until done. Drain and add to soup just before serving.
