5 Healthy Halloween Recipes

Are you looking for some healthy Halloween meals and treats? These recipes are fun, easy, and healthy, so if you are staying in this Halloween, or just want to try something new, give these a try!
 
1. Mummy Pizzas

Mummy Pizza

For this recipe, you will need:
  • 2 ciabatta rolls
  • 4 Tablespoons sun-dried tomato pesto or pizza sauce
  • 1 Cup grated mozzarella cheese
  • 2 small zucchinis
  • 4 black olives

Directions: Start off with ciabatta rolls. Spread a layer of pizza sauce on the rolls, and sprinkle on some Parmesan cheese. Slice your zucchini into ribbons and lay them on top of the dough in different directions and angles. Then slice an olive in half to use as the eyes for your mummy.
Bake for about 20 minutes at 375 degrees, until the cheese is melted and the zucchini ribbons have wrinkled. Enjoy this healthy snack or meal!

2. Halloween Roasted Sweet Potato Pumpkins

Sweet Potatoes

For this recipe, you will need:
  • 2 large sweet potatoes
  • 1/2 teaspoon pumpkin pie spice
  • 1 tablespoon sugar
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt

Directions: Cut off the ends of your sweet potato, and slice them
thinly. Use a pumpkin cookie cutter to cut out Jack O’ Lanterns. Lay them on a baking sheet and drizzle olive oil over top. Sprinkle salt and pepper and bake at 400 degrees for 18-20  minutes.

3. Granola Zombie Eyes

Granola Zombie Eyes

For this recipe, you will need:

For the eyeballs:
  • 1 oz vanilla-flavored candy coating
  • Your favorite granola bites

For Decorations:
  • 1 pouch of Fruit Snacks
  • Fresh green grapes, sliced
  • Decorating icing and gel

Directions: In a medium microwavable bowl, melt the vanilla candy coating on high for about 30 seconds. Stir and heat in 15-second increments until the candy coating is smooth. Use a toothpick to dip the granola bites into the candy coating. After the bites are coated in the vanilla candy coating, decorate the bites with the grapes, fruit snacks, and decorating icing and gel to make a Spooky eyeball.

4. Chocolate Mousse Orange Jack O’ Lanterns

Chocolate Mousse Orange Jack O Lanterns

For this recipe, you will need:
  • 6 Oranges
  • 2 cups cashews
  • 1 cup coconut cream
  • 3 tbsp maple syrup
  • ½ -1 cup raw cacao powder
  • Handful of mint leaves

Directions: Slice the top of your oranges, scoop out the fruit, and draw faces on them. Next, add your cashews, coconut cream, syrup, and cacao powder to a blender and blend until smooth. Fill the emptied oranges with the chocolate filling and place into the fridge for 1-2 hours. Next, remove them from the fridge and add the tops back to the oranges. Add a mint leaf to the top, and you have mini Jack O’ Lantern Mousse Cups!

5. Candy Corn Smoothie

Candy Corn Smoothie

For this recipe, you will need:
  • 1 cup frozen mango chunks
  • ½ cup coconut milk
  • 1 frozen banana
  • Teaspoon size of turmeric
  • 1 cup frozen pineapple chunks

Directions:
  1. In a blender, pour in the coconut milk, and the sliced banana, and blend until smooth. Remove your cups from the freezer, and spoon this mixture into the bottom of each cup.
  2. Return the cups to the freezer and start on the next layer.
  3. Start with a clean blender, and blend together the mangoes and turmeric, blend until smooth.
  4. Take the cups with the first mixture out of the freezer and spoon this second mixture over top of them
  5. Return the cups to the freezer again, and start on the third and final layer.
  6. With another clean blender, blend together frozen pineapple until smooth. Spoon this third mixture over top the other two mixtures in both cups
